I have been running Hyper-V on my Surface Pro, but can find no easy way to exit Full Screen mode with using a proper keyboard. The control sequence to exit Full Screen mode is CTRL + ALT + PAUSE (Changes the Virtual Machine Connection window to / from full screen mode.)
I can find no equivalent to the Pause key on a Type Cover. I have tried the media key (pause) in combination with CTRL + ALT, but with no luck.
Considering that the version of Windows 8 that ships is the Pro version, that supports Hyper-V, I find it strange that Microsoft appear not to cater for this key combination, or allow it to be changed in Hyper-V.
Any ideas?

Guys i think i found a fix for this some keyboards require you to press ctrl+fn+alt+break/pause/right shift
Hope this helps. :-)
I have just been using the "Restore Down" button on the pinned VM bar at the top of the screen. I know it's not a keyboard command as you were looking for, but it does work.
If that won't work for you there is a program you can get called KeyTweak that will let you remap the function keys to whatever you like. I haven't used it, but I know someone who does and he says it works. The only thing to note is during the install, choose Custom Installation and deselect the add-ons you don't really need. If you choose the Express Installation, you'll get some crapware.
You can get it from Tucows: http://www.tucows.com/preview/327616
Use CTRL + ALT + Home
None of the suggested key combinations brings my notebook out of hyperv fullscreen mode. However, I found a two key sequence workaround. Pressing ctrl+alt+left-arrow causes the notebook to rotate display -90 degrees and releasing fullscreen mode. Quickly follow with ctrl+alt+up-arrow to restore normal mode. You are now out of fullscreen mode.
