You could try to clear the Teams cache with a single user.
Close the Teams application. Then navigate to the following location.
%appdata%\Microsoft\Teams
Delete all contents and start Teams and test editing again.

Hi, we have been having some issues with a few users finding when they share an Excel sheet via Teams screen share. Sometimes Excel will freeze when the presenter edits the file.
It has been ok until recently and different people have found this intermittently with different Excel worksheets.

Will try and see if I can reset the Teams cache for someone experiencing the issue.
Although the issue seems quite sporadic. We work in a domain AD environment running Group policies with Office 2013 15.0.4569.1506 and Teams 1.3.00.13565. Is a bit tricky as it has been happening sporadically in executive meetings.
I noticed also on forums that people with the same issue had mentioned that Windows version 1902 (Build 11328.20392) solved the issue for some people. Can you confirm this?

It can resolve the problem.
There could be many possible reasons for that.
Some users have resolved it by updating the latest device drivers to workstations.
One way is to share a full screen. Then you aren't directly sharing from the Excel.

If you have chance to install Office 365 ProPlus or Office 2019 Professional versions to workstation. These versions works better with Teams.

As Tkujala said, you can try to update your device drivers to the latest to see if it can be fixed.
To make sure if this issue is related to client, we also recommend you edit shared Excel in Teams web client to see if this issue still persist. If it is no problem, this issue may related to Team client.
