We have internal application URLs [need transaction monitoring] which are compatible with Edge and Chrome but by default Operations Console try connecting IE. I have disabled IE on my server and installed Chrome and Edge. The problem is both browsers are not detected by Operations Console when attempted to record web transaction. Non-IE browsers supported for this scenario ? If yes, how to get it done ?

No, it only works with IE.
And even latest versions of IE/latest versions of Windows Server requires quite a bunch of tricks/hacks to make the extension work...

I'm personally almost not using web transaction monitoring anymore, it's way outdated and doesn"t support too many scenarios (form authentication, js pages...)
