When we finish install Azure Stack HCI OS, then it is mandatory to joined to the domain?
Can we use Azure AD?

You must have an Active Directory Domain Services (AD DS) domain available for the Azure Stack HCI system to join.
There is no support for joining Azure Stack HCI to Entra ID. You can, however, deploy VMs onto Azure Local that can be Entra ID joined

Just to confirm this mean i must create ADDS on my entra?
No - Microsoft Entra is separate/distinct from AD DS. These are two different identity providers. You must have an Active Directory Domain Services domain. You could implement it in your Azure subscription - but this does NOT make it Microsoft Entra.
However, considering the context, your AD DS deployment should be in the same physical location as your Azure Stack HCI deployment
