you can export the application gateway config in the portal backup the config file ( JSON) and if needed u can deploy VIS ARM .
yes you can have both V1 and V2 however it is not in place it needs to be manually created

Both can coexist in the same subscription, resource group, and virtual network, but they will have different public/private IPs.
