I started Azure training yesterday and was setup with an Sandbox as part of the training. I am continuing the training this afternoon and was alerted that the sandbox subscription in my 'Microsoft Learn Sandbox' directory was deleted. How do I get it back so I can continue the exercises?

The sandbox environment created for a module is available for four consecutive hours to ensure that you can finish the module. The Microsoft Learn exercises are meant to be finished in one sitting, in an hour or less.
Unfortunately there is no method to "recover it". Going forward, pls consider the limited duration of the sandbox availability

I went through about a half dozen modules and decided to stop for the day. I had no idea the Sandbox wouldn't be available for me to continue. Does this mean that I won't have a working sandbox for the current module I started today (and all the subsequent modules I intend to go through)?
You should - but it won't be the same one you started with
