@Sk Nazrul Islam, Thanks for posting in Q&A. WIP is a feature we can choose which apps to protect, the level of protection, and how to find enterprise data on the network. Starting in July 2022, Microsoft is deprecating Windows Information Protection (WIP). Microsoft recommends that you use Microsoft Purview Information Protection and Microsoft Purview Data Loss Prevention. Purview simplifies the configuration set-up and provides an advanced set of capabilities.
For the windows option under app protection policy, it is used to enable protected MAM access to org data via Microsoft Edge on personal Windows devices. This capability is known as Windows MAM and provides functionality using Intune Application Configuration Policies (ACP), The detailed settings are described in the following link:

For the difference, Windows Information Protection (WIP) is a lightweight solution for managing company data access and security on personal devices. It helps protect enterprise data against accidental data leaks without requiring changes to your environment or other apps. Windows MAM, on the other hand, provides more access settings and can selectively wipe company data from personal devices.
And app protection policy only supports to be applied on apps which have integrated the Intune SDK, see Microsoft Intune protected apps.

For WIP, the app we can add are with the following type and for the detailed steps to add, we can refer the first link above.
For app protection policy for windows, the only app I can add is Microsoft Edge now.
