New Outlook - No option to change Signature

When attempting to edit my signature in the new outlook, there is no option to edit my existing signature. I've read a few other posts about how there is the option under settings--> accounts--> signatures but there is no option (See attached)User's image

There is also no option for signatures under Mail --> compose & reply ---> signatures: (See attached)

Why is there no option to edit my existing signature in the new outlook? I cannot even access the classic outlook to edit my existing signature. When i also attempt to do it from the task bar when sending a message and click 'signatures' it takes me to the accounts page but no signatures option.

I have not been able to find any assistance on any other threads.
