How do I setup MS 365 office training plans for multiple people in my org, without including AI and Co-piolet in the materials?

I have been tasked with creating a training plan for MS Office 365 to include 3 levels of training including Admin, Manager, and Users. The training needs to be ground up, beginner to advanced, and include Teams, OneNote, OneDrive, SharePoint, Word, Excel, PowerPoint, without the AI and Co-piolet info. Is there anything like that available through the learn hub?
