Yes sure, it is recommended to use MS product because it is more stable. But you can use 3rd party VM product for deployment.

I'm trying to set up a RDS VDI environment on-premise to host Windows 10 LTSC virtual desktops. I want to use the RDS Broker and Web Access role to make the virtual desktops available towards on-premise user.
Is it possible to use an existing ESXi Server / VMware vSphere farm as the virtualization Host for the desktops or is using a Windows Server with "Remote Desktop Virtualization Host"-role (e.g. Hyper-V) the only way?
Any help would be highly appreciated.
