For the Premium tier, while updates are also applied automatically, it is important to note that upgrades normally do not affect the availability of your apps. The upgrade process adds extra instances to ensure that the same capacity is available during the upgrade, and the full upgrade process typically finishes not more than a day. However, you will not have control over when these updates are applied, and they will occur automatically.
You can monitor service updates and receive notifications about them through the Azure portal, and it is advisable to validate updates in non-critical instances before they are applied to production instances.
