I need to know what the functionality of these pods are
I understand its part of Microsoft defender but when its disabled for the subscription why is this in the kube-sytem namespace

Publish the collected data to Microsoft Defender for Containers backend service where the data will be processed for and analyzed.
For more information you can refer here. As you stated its part of Microsoft defender but when its disabled for the subscription it may still be displayed in the kube-sytem namespace due to “Incomplete Uninstallation” or “Auto-Deployment Mechanisms” you can run the following commands to resolve it
Use the following command to list all resources related to Microsoft Defender:
kubectl get all -n kube-system | findstr "defender"
Identify and delete ConfigMaps or Secrets related to Defender:
kubectl delete configmap <configmap-name> -n kube-system kubectl delete secret <secret-name> -n kube-system
