I understand your concern, that the recent OS update has caused compatibility issues with Edge, Chrome, and Outlook, leading to crashes. The temporary fix of uninstalling the update resolves these issues but for the permanent solution Please try to do below things might get resolve issue
Could you please check that your Edge, Chrome, and Outlook are running the latest updates, if not please update those and check once might get resolve issue
To identify the issue also enable diagnostics for your Azure Virtual Desktop environment, go to the Azure portal and navigate to your AVD setup. Select the diagnostic settings for your host pool, application group, or workspace. From there, click on "Add diagnostic setting" and choose the logs you’d like to collect, such as Windows Event Logs and performance counters. It’s a good idea to collect both system and application logs to help diagnose any issues more effectively

It is important to note that capturing more detailed logs can cause additional system overhead, so you should only enable detailed logging when necessary and disable it when you are done troubleshooting
