    Like you mentioned your CPU is not supported and Microsoft did not shared any announcement on updating the requirement.
    You may open start and search for feedback and open the Feedback Hub app and share your concern.

    Hello,

    Ryzen 3 1200 is not on the list of Windows 11 supported AMD processors.

    With the release of Windows 11, the minimum requirements to upgrade are final. The lowest generation of Ryzen CPU is 2000 ZEN+. Ryzen 3 1200 is not supported.

    The AMD CPU compatibility list has been updated about a month ago, but the list will surely be updated at some point with more supported processors.
    I also believe Microsoft is working to get more processors supported.
