What causes the available background colors for tables to change between documents?

have two documents--Document A and Document B. Both documents were created using Microsoft Office Professional Plus 2016 and saved in the .dox format.

Each document has a table in it. When I try to change the background color for a row in the table, the colors available in Document A are not the same as what is available in Document B. See the picture below.

This has happened with a number of documents written in our department using the same version of Office/Word. The color I need is found in row of colors in Document B. It is identified by the blue square in the next picture.

The only way I've found to get the color in documents that have the background color options seen above in Document A is by opening another document where the colors are like you see in Document B above and click on the background color icon, More Colors..., and then Custom, and then writing down the numbers in the red, green, and blue boxes, then going back to Document A and adding the color I want using those numbers.

I have never experienced this before in the 25-30 years I've been using Word. What causes this inconsistency between documents and how do I fix it? Thanks in advance for the help.

    The Theme Colours of Document B probably can be achieved in Design tab of Ribbon, Colors button, selecting one of the themes (“Office 2007 - 2010”, for example). Try to select the “Office” theme or another one that is also used in Document A.
