Based on your question we understand that you are facing an issue with the Azure Virtual Desktop host pool performance while redirect cameras.
Please check the RDP properties for the host pool are correctly configured to handle camera redirection. You can check these settings using Group Policy.
Check for any Group Policy settings or registry configurations that different between Windows 10 and Windows 11.
Check that your session hosts have enough free CPU and memory space. if you have a high number of users, consider upgrading your VM.
Check that all software and Azure Virtual Desktop agent and the Remote Desktop client, is up to date.
You can configure the quality and encoding settings for camera redirection to balance performance and quality. Lowering the video quality will reduce the load on the session hosts.
Please close the unwanted applications while using redirected cameras.
