Is SAML2.0 support in SharePoint SE and is there any official articles to prove this? We want to use SAML2.0 for SP authentication.

I'm afraid SAM L2.0 authentication is not support in SharePoint Subscription edition. SAML token-based authentication in SharePoint Server uses the SAML 1.1 protocol and the WS-Federation Passive Requestor Profile (WS-F PRP). Reference here: SAML token-based authentication.
