The documentation you're looking for doesn't exist, but OOS does cache content while it is being viewed/edited.
Office online server under the hood
Can some one please point me to the link or any documentation that can help understand how Office Online Server works with SharePoint under the hood ?
Not looking for installation guides.
Trying to under stand if it pulls the document from SP library and save it on OOS server or just read the document and inject wopi frame/i-frame to display documents in browser. Does it processes document in memory on OOS server or saves files some where etc .

OOS does cache content while it is being viewed/edited.
Office Online Server provides a page at the address http:// OfficeWebAppsServername/op/generate.aspx that you can use to generate links to publicly available documents that have UNC or URL addresses. When a user selects a generated URL, Online Viewers enable Office Online Server to get the file from its location and then render it by using Office Online.
